I think the body is Chosen undead. He only has all the souls of the people who linked the flame, and Gwyn being the first catalyst and taking control during his second phase. Makes sense you come back to finish what he starded and put down an old friend that did so much.

The entire Undead Settlement was pretty Berserky, from the arc with the priests. The thralls have hoods that some of the torturers have, there's a female version of Mozgus that hits you with a book, the crow demons transform like the executioners did.

Fire came to a shapeless, foggy world, where all that existed were immortal dragons and archtrees. The old lords from DS1 found their lord souls in the flame, the source of their power, after crawling out of the dark. They became the progenitors of most life in the world, by dividing the power of their souls umongst their subjects. It's pretty much assumed that most of the loose souls you collect are echoes of that original power, and as you level up, you're gaining more of it, until you're strong enough to burn yourself as kindling to maintain the system
Linking the fire seems to be the sacrifical act of coelescing the given power back to it's source, to prevent the flame burning out and everything the lords built dying. The abyss and dark seems to be the alternate, opposing force that came with the fire, and grows stronger the more the fire fades.

A part of being a lord of cinder means you linked the flame, it doesn't mean you have to do it willingly, Aldritch was forced to do it for example.
Lothric linked the flame but he was too weak physically to deal with it, so his brother took the brunt of it and it broke his body and mind.
Lothric doesn't want to link it again because he sees the world around him in a ruin and doesn't want to suffer for what he believes is for nothing.
