The Witcher 3 has, mechanically speaking, far more complex combat than Dark Souls.
Add on top of that a proper role playing experience and a cohesive story line with bucket loads of side content, it's clear that the Witcher comes out on top every time.

What even is the Witcher 3? An action game? The combat is more limiting than Fable (not even exaggerating. Fable has everything from guns, magic, potions, bows, crossbows, two handed weaons and small lighter weapons as well as a rolling / counterblock mechanic). RPG elements? You get 2-3 choices on average ranging from Chaotic Neutral to Lawful Neutral (because that's all the restrictive source material allows). Quest design? Every quest feels the exact same mechanically due to the limiting gameplay.

DS3 combat is extremely overrated. The combat itself is quite simplistic, that's why they had to add the bullshit spins and 360 ballerina sword strikes in the third installment.
People like it because it's hard unlike 99% of games and because of the PvP ganking.
Witcher 3 is a game of far higher quality. That's why it won GOTY and Dark Souls 3 will not.

Never got the hype of Witcher 3 and judging by how many people still play/discuss it, it seems to be nothing more than just that, hype.
The controls are awful, combat is good for what it is but its restrictive nature makes it seem worse for some reason. Enemy variety is painfully mediocre in terms of their attack patterns (all forms of Wyverns/Griffons fight almost identically. All Drowners/Nekkers fight almost identically, same with all wraiths/human enemies etc etc). Loot is a joke and overall replayability is almost non existent because what else is there to role play? A slightly more condescending Geralt?
The game was a good time sink at best and a complete chore at worst
Dark Souls has better and more challenging combat. Objectively. Witcher 3 has a better story, setting, characters, music, etc.
The Dark Souls series is fantastic, but say for a moment you used cheats to make yourself invincible; well shit I feel as though the game would be worthless. But make yourself invincible in the Witcher? I'd still beat the game and enjoy every second of it. Make of that what you will.
If you think games are exclusively supposed to exist as vessels of challenge and difficulty, either through puzzles, strategy and skill, then Dark Souls is more pure in that regard. If you think games can expand beyond that initial goal and become an art form unto themselves, Witcher 3 is a perfect example of it.

Dark Souls lore is objectively nonsense. The only reason people give a shit about the lore is because there is literally only speculation. There is no cohesive narrative or characters or anything of tangible value.
Honestly, Dark Souls is intriguing in a kind of immature, childish way. Like trying to deduce the lore of Pong. Like yeah, you can try and have fun as a thought experiment, but it's basically acknowledged that nobody plays through Dark Souls wondering what happens next. Same for games like Zelda or Call of Duty.
Witcher is indeed supposed to be a 'mature story', I don't know why spelling it differently makes it something undesirable. It's supposed to be complex, multi-faceted and reflect a marrying of realism and fantasy. It's really not Generic Tolkien Fantasy setting, it's actually far less creative; a direct reflection of Medieval Europe.
Making things more outlandish doesn't make the lore better or enticing. More people prefer the Halo Universe to Warhammer 40k. More people prefer Game of Thrones to Warcraft.
I might be able to give you music; Witcher 3 music was lacking in diversity, but what there was I think was really, really good.
