And every time it's fucking terrible (VIII, XII, XIII). IX and X are the only ones with a tolerable battle system since VII. And of those only IX and XII have a good setting, and XII's was just lifted from Tactics.
There's "trying something new" and then there's change for the sake of change. A series shouldn't try to reinvent itself with each entry, otherwise there's no point in it being a series.

2 introduces a party system and a more detailed story, and 3 has an even more detailed story, but they're still relatively simple. If you were really bored with 1 I'd say skip to 4 or 5 and you can go back later.
2 is set in the same place as the first and its surrounding kingdoms, 3 is a prequel to 1, the three games form a trilogy.
Then 4-6 form a second trilogy, but you can really play them in any order. Many consider 5 the best game in the series.

Dragon Quest VIII was the best and my first game into this franchise. Opening that shit on Christmas Day was great. Sure, playing the Final Fantasy XII demo got me hype with their dungeons and Jurassic Park, but that was just an appetizer. The main course, over 100 hours, will never forget the pleasant story and grinding. I wish I could relive those days.

I really respect Final Fantasy for constantly trying to innovative it's fundamental battle mechanics but unfortunately I don't think they've managed to create better combat than the traditonal.
I consider dragon quest to be the greatest of the jrpgs franchises, followed up by SMT and then probably final fantasy. I think SMT is a more sophiscated game than Dragon Quest, and probably has better combat to be completely honest, but as much charm as SMT has I don't think it quite reaches the levels of sheer enjoyment that is playing Dragon Quest.
For an serious fan of video gaming all three of these franchies should be attempted, although I am constantly underwhelmed (i have been replaying FF IV and V recently alongside Nocturne and DQVI) by final fantasy in comparrison to the other two.
