It's when he hits phase 2.
Way more aggressive with erratic attack animations. The wind-ups are all over the place and 2 of his attack share the same wind-up, where one is instant and the other is unnecessarily slow to follow through, baiting players into dodges and making it hard to find a good feel for dodging. Nameless King does this as well but not to the same extent. Also his 5 hit combo, which kills you if you get hit by either the first or second swing, has exceptional tracking and range.
His lightning storm also approaches from off screen although not too bad to deal with since I was able to spam roll as soon as they appeared thanks to Bloodring.

Speaking as someone with an SL1 run, I'd have to say that Dancer and Pontiff are probably the hardest, Nameless King and Soul of Cinder are pretty easy in comparison.

Phase 2 is the only reason I put it higher. That fucking abomination of a design choice is hell to looks at and play vs melee. Constantly moving MS Paint tier texture with half of it's attacking limbs off screen and it's idle animations are sort of similar to it's attacking ones with that shitty texture makes it worse.
Champion Gundyr on the other hand is a fucking joke. Take tutorial boss with a bit more health and instead of the retarded phase 2 just give him some more massively telegraphed halberd swings and make him vulnerable to bleed.

These games have to be made for new audiences in mind as well, while optional bosses such as Nameless King can be made hard. The dlc bosses will also probably be harder than the main game, since those are made with the thought process that people have beaten the entire game and are ready for more.

He has enough recovery for a minimum 1 hit and run as long as you're not using something slow as fuck. His empty hand has a single slow elbow attack and most of his wider swings come from that side, which when you dodge he has to waste time rotating before he sends another attacks. Dragon's Firebreath can't fucking oneshot you at 30 VIT, and there's no way you're getting two-shotted from his combos.
Even still, how the hell do you manage to get HIT by the fire breath attack? I learned that attacking his head can get you burned after getting hit by it once (which also didn't kill me) so I attacked his neck instead. The one where he goes up into the air and breathes fire also doesn't oneshot you, and if you get hit by it you can spam roll to avoid taking anymore damage from it.
And please, tell me. What combo is killing you in two hits? It'd take him four-five hits at the most to kill me when I was playing through the game, and after the second hit you can just roll away from the rest of any combo he does, exactly like Bloodborne.

Well here's where our stories diverge because I never got one-shot by that attack ever. And unlike Ancient Dragon, Nameless King's dragon breath does not cover the entirety of the arena. In fact, it's a very small part of the arena and when he flies up you have more then enough time to run away from the center of the attack, the part of the attack that has apparently been one-shotting you. Even if you get hit you should be able to roll and roll and roll getting hit a second time. I know that this works for multiple fights because I've fought the boss as a phantom multiple times.

I died once on Wolnir and that was because the fog fucked me. Second try when I beat him he had me pushed against with nowhere to move except fog or solid rock. Shame though the fight wasn't harder it was such a good introduction and it had the mechanics going. It's hard to make those gimmicky boss fights good though. Some of the bosses in this game were REALLY cool, namely the soul of cinder and the nameless king. However I felt like there were too many gimmick bosses and too many of them didn't feel like a fair mano el mano.
Examples: Abyss watches(multiple enemies do not play to the strengths of the souls combat and it feels frustrating and annoying rather than fun but challenging)

I don't see why they didn't make the birds not exist and have the attacks be added onto his weaker moves when he's below half hp(Eg, the shield bash with bad range)
Pontiff would have been great if the ghost only spawned sometimes or had a timer, so people with weaker weapons that couldn't kill it easily could play defensive and outlast it, having a short window every minute or so to get a few hits in without such a heavy risk of dying.
What do you guys think? Was there too many not 1v1 boss fights/cheese? It annoyed me a ton but I want to know what others think.

When you attack his two-band arm he'll do a slap attack, when he does it his other arm is in a vulnerable position.
Even up against the wall you can dodge the mist by running down a little bit, there should be a gap between his permamist and the one he vomits out(it have a circular radius from his head and the area is sortof cone shaped.)

All those aspects are fairly important to me when considering how much I value bosses.
I wouldn't consider maiden astraea to be such a good boss if her music and atmosphere weren't so great, likewise for micolash.
Bosses don't even have to be hard to kill to be fun, that's why I value combat mechanics above difficulty personally.
But I can understand why some people would value a boss's difficulty to be it's most important trait in these games, and so I weighed it similarly.

How is the Storm Drake badly designed at all? It's basically babby-mode Sinh + an occasional lance strike. Dodge straight into the lance, run away from fire breath, and you get free hits after almost every attack avoided. The nameless king is definitely the hard part of the fight, and he hits like a truck, but the timing for his attacks is straight up muscle memory if you played DaS2 and 1 without shields.
You want to talk about the Pontiff though, now that's a boss with a retarded moveset. Everything he does breaks your guard, some attacks are hard to dodge on reaction, has retarded tracking on his spin-to-win attacks, and then he gets a goddamn clone to also spin-to-win. Nigga I don't even like Bloodborne or Dark Souls 2, but saying that a full price game NEEDS to be 60+ hours is just silly.
The game might not be crazy long, but I'd rather have a few well crafted and memorable areas over a bunch of long, drawn out areas just for the sake of padding the game's length.
The amount of time you spend playing a game isn't whats important, its what you do during that time. There are some JRPGs that take hundreds of hours to beat, but thats just because you need to slog through long linear areas filled with random encounters every 4 seconds, that doesn't mean its a good game .

I ended up getting rid of my fashion souls, and equipping my highest stability shield with 100 physical resistance, while still being under 70 equip load.
Be vary careful about hitting him from the behind, he'll kick your shit in.
You can roll through almost everything though, that's how I finally beat him.
