While I consider myself fairly knowledgeable about some of the common fan held theories roping together Bloodborne's lore and overarching "plot" while you're traversing through the game, you seem to have heavily misunderstood the point of the sentence you are referencing.
That point referred to the eldritch twist following rom, and how it teases more interesting things to happen, when literally all that follows is two absolutely awful nightmare areas, one that does very little new and upper cathedral ward, which is rushed.

"The Holy Blade" is probably the coolest one, because of how it changes halfway through the fight. Mechanically DaS3's final boss or maybe Orphan of Kos are my favourite fights, but Ludwig's transition combined with the music is the coolest fight in the series.

The weaker of the series is a tie between DaS II and DeS for me. I can excuse alot of shit with DeS because it was the first and they improved alot. Level design is pretty good though. DaS II PvP was actually good, but SM is cancer. I've had the most fun with BB and DaS III. DaS will be my baby though, even if it's unfinished.
The DLC and SoTFS improved DaS II so much though.
This is ranking them as souls games. On it's own DaS II/SoTFS is still a good 7.5/10 in my book.

I couldn't disagree any harder. I think DaS3's biggest problem is it's level variety. High wall is just another Burg, Settlement is Hemwick, Farron Woods is Valley of Defilement, Catacombs is catacombs, Irithyll is literally Anor Londo, everything after that is just the Chalice Dungeons from BB except for Boletaria at the end. Dark Souls 3 didn't impress me at all in its areas because i'd seen everything it had to offer before. The only areas that really struck me as new and exciting was the Cathedral of the Deep and Archdragon Peak.
Bloodborne got it right with areas like Cainhurst, the research hall, the fishing village, Hemwick, the Choir, Frontier, Mensis, Byrgenwerth. Yharnham itself (old/central/Cathedral Ward) was also really interesting itself.
