Finished the game about an hour ago but the same goes with every souls game, I always feel like I missed half of it out.
Not like I don't mind playing through a couple of times though since they always love to pack new stuff into NG+ playthroughs.
There is absolutely nothing wrong with starting with Dark Souls 3.
It's very obviously superior to the first two and is the one with the best gameplay when it comes to world design, fairness, and overall game speed and weapon movesets.
Honestly, after playing DS3 and Bloodborne, I can't go back to the other ones. Maybe I'll play Demon's Souls again whenever I feel like it, but Dark Souls 1 and 2 are too slow for me at this point.

all the boss soul weapons are "decent", but you're not going to be able to upgrade them until really late into the game because demon titanite is rare and it takes a ridiculous amount to upgrade boss weapons.
If you're doing a strength build you're probably better off getting a normal large weapon and upgrading it with "heavy" infusion (you can't infuse special weapons)

Wasn't too hard really. Some attacks were tough to avoid but there's plenty of estus by the time you get there.
You can cheese them with parries or backstabs if you are so inclined. I didn't but it's possible.

it's fucking amazing, easily the best boss in the series. but it's pretty easy once you know what to do.
ALWAYS dodge INTO the attacks, hug as close as you can and backstab then get a few hits in as he's recovering -- then roll the fuck away
