Judging by some Dialouge seems that linking the fire and becoming lords of cinder has become a formal process over the Millenia since DaS1. Prince Lothric was chosen at birth to become a Lord of Cinder, and it seems Aldrich was chosen as well.
I think society at large realised that they needed powerful beings to keep linking the fire, so they formalised the process.
