I might be autistic but it feels much more fulfilling to buy an expensive game and have everything rather than buy a cheap game and only have a 3rd of the content.

Episodic content was all the rage 2000-2010 and was the natural successor to expansion packs.
Unfortunately DLC has taken over where episodes and xpacs once were.
I doubt it will ever be the norm but I think it should be a little more popular than it is now.
Here's the thing, yall probably heard that game developers are afraid of making entirely new games because making games is costing more and more so they need to know they're going to recoup all the money they spent. It's why there are so many yearly titles.
Episodic games would be a perfect way to try something brand new. Instead of risking producing a full game IP that might flop, make like 1/3 of it as a test run. See if people like it.
If not, then at least you didn't lose millions of dollars. If it does work then you just make the rest of the game and make money.
I can see it working for "weirder" titles. I wouldn't be surprised if, say, Nintendo starts doing this since they love making bizarre games like Pikmin.

The problem is, unless you're building each episode using a completely different engine and assets, 90% of the work is likely going to go into putting together the first episode. You're also not going to save any money on marketing by making it episodic. If anything it might be more expensive, unless you're not planning to do any marketing for the later episodes.
