I've used it until mid to late game as I couldn't find other good dex weapons early. it's very decent and is basically the same old uchi. but doesn't feel overpowered or anything. the R2 may be a bit too cheesy for a curved blade. also weapon skills are actually useful.

As a rule of thimb, dex are quick but weaker and str are the opposite, however DaS3 isn't that balanced in that regard. If you're new and don't care about making a buld yet (You shouldn't) I'd suggest increasing HP in the first few levels while trying as many as you can, once you find a weapon that clicks, find what it scales with and pump that.
You can also go quality (upgrade both, up to the softcap of 40).
Start as a knight if you're going pure melee as well.

Eh, not necessarily. Infusion isn't always the best choice. It's a case by case basis. Most of the time though it's typically good to infuse a weapon with something it already scales well with for best results.

I don't think I can keep playing this game at the FPS it's at. Early game I could fuck up and tank a couple hits but now that I'm at Lothric Castle and Archdragon I need to be more accurate which I can't do when I'm constantly dropping to 15FPS or lower.

Thing is you CANT remove them without another stone. Some even remove the stat scaling altogether, so you dont really add more damage in certain scenarios.
It's best left at the end of a fully upgraded weapon to take advantage of the buffs.
