I beat him on my first try without even breaking a sweat. I was doing so much damage so easily that it took like 2 minutes to beat him. When he started charging at me I just rolled. Then just kept circling him and blocking everything and hitting him with my sword from time to time. I mostly stayed behind him and stabbed his ass.

If you roll into him phase 2 you will get hit by his slam. If you roll into him and he charges you will get hit because his entire body now has a hit box.
You should roll straight backwards in phase 2 and you'll never get hit.
Also, use your stance when he puts his mace to the ground before the charge in phase 2 and use stance when he does his ice breath. At this point, you only need to hit him a few more times

What kind of build are you running?
I pumped strenght and vitality to recreate my DS1 stone shield+greatclub character. Resulting in me having less than 600 hp at lvl 50-something and getting rekt all the fucking time.
I guess a lot of excess HP would make the game a lot more forgiving as I typically don't die due to running out of estus but becoming splatted by some attack that drains 60% of my hp.
