1. Vagrant story - In my opinion the greatest rpg on the PS1. It reached me on so many levels and as I got older I only continued to notice the smaller details better. I still have the disk today
2. Final Fantasy 7 - This was the game that really got me into japanese rpgs. The story grabbed me and kept me interested all the way through. It's cult following really speaks for itself.
3. Legend of Dragoon - This was one of the more heart grabbing rpgs for me. Dart just couldnt catch a break. The dragoon attacks were great visually and with me being 11/12 when I played it, that kept me interested. I also still have it today.
4. Metal Gear Solid - The definition of "What a tweest!". If I recall my numbers correctly, I've beaten this game more than 10 times through the years.
5. Street Fighter EX Plus Alpha - While I liked Street Fighter Alpha 3 MUCH better as far as design, this game was much more memorable to me. Characters such as Skullomania, Kairi, Garuda are some of my favorite SF characters of all time and I hate that they arent in modern games due to ownership reasons.
6. Xenogears - Nigga.......This game was my childhood. Xenosaga really made me cry because it didnt live up to the high expectations
set by Xenogears. There was a really unique battle system, memorable characters, GIANT FUCKING ROBOTS, and God; who doesnt like God.

So you're pretty much just saying you had an N64 and the only PSX titles you knew were FF, right? The PSX library was huge and there were a lot of good games. Saying "they never kept my attention long enough" is basically admitting you never played the games mentioned.

My current PSX collection of games is all Final Fantasy. I have plenty more PS2 games that I enjoy, and actively playthrough once every couple years
Elemental Gearbolt is the only game I miss on PS1.
Had so much fun playing it, never managed to finish it though.
