The trick is to just go ham once his shadow pops out, the shadow doesn't have much health so you just want to kill it asap.
Basically, kill it to death.

I haven't finished the game, but i think i've killed 3 bosses after this guy and they were all pretty much pushovers compared to this guy. So i'm guessing he is the rapist of the game.

Using a STR weapon just doesn't seem to be worth it most of the time in this game. Most bosses are a lot easier with a faster weapon

yeah this guy is really a pain in the ass if you can't block his attacks after split (i.e. using a medium or light shield or no shield). due to the delayed action sometimes it's impossible to roll away from one of the attacks and you are just fucked.
instead of waiting for him to attack I pretty much charged in often and then pulled way back to recover. if you are lucky you can kill the shadow but it's also pretty much not worth the trouble.
