Because I play them while tired and thus I underperform and lose when I know I can do better.
If you keep dying to a difficult game, you are essentially wasting your time because video games should be made to make you happy, not mad. Challenges are not bad, but if you keep getting destroyed by difficult challenges, you won't be having fun, and the thought of wasting your time will make you angry.
Honestly, people shouldn't invest so much time into video games, especially ones that emphasize on video games. It's just mindless entertainment, and nobody should have to pursue something too difficult to have fun.
I personally think of video games as a children's toy, and it is embarrassing to see 30+ old people continue to dedicate so much time to video games.

Pretty much only when something happens that is literally beyond my control. Unless I'm plying an RPG, RNG pisses me off, stupid teammates pisses me off, literal cheating AI pisses me off.
Other than that I never get mad at games. If I get stomped in something because the other guy was just better at the game than me I'm fine, if I fail a song in a rhythm game because I'm not skilled enough to do it yet I'm fine, so on and so forth.
I don't. I get frustrated when I fuck up while I'm too focused on winning instead of learning.
I don't get mad at the game, I get mad at myself for wasting so much time on a non-productive hobby while never improving
