Wear what you want. Really the only good things on armor is the poise or hidden effects. Resists can be swapped with rings.

Get better rings. With a build like that you should be running Third Dragon Ring, Chloranthy Ring +2, Ring of Blades +2 and then another ring of your choice (Royal Soldier's Ring +2 if you want to wear heavy armor.)
There's literally no point on keeping to a specific soul level, because soul memory will eventually fuck you over and you'll get matched up with people with ridiculous levels. You should at least have 50 Vit and End. You're being a moron and putting equal stats in everything. Don't, unless you're going for a weird mundane build; which you clearly aren't.

Armor is literally worthless in DaS2. Mobs will do the same damage if you're wearing light armor or Havels. The difference is something like .01 percent. Always go for aesthetics.
