It really isn't overrated. As for Dark Souls 3, I consider it the second best in the series behind BB - mainly due to Dark Souls 3 having more dips in how interesting and fun the content is.
I went through DaS3, seeing all the optional content and main-game content (while only having to look up where the location of the dragon's whatever level was) and it took me 25 hours compared to the 27 it took me in BB. Granted, the games are so similar in length that the only reason why it was shorter was probably because I'd practiced during weeks prior.
But Dark Souls 3 makes odd design decisions. Multiple times you'll finish a boss's health bar expecting it to be dead and then it revives in a cutscene and you have to fight it again - leaving you, whom it had (generally speaking) already lain to waste to be swiftly killed, because you couldn't have foreseen a change. Then there's other minor shit like the dumbass big enemies returning that you should kill by hugging them like every time you see a fucking giant in the game, and some other enemies that are slightly less balanced than BB. Bosses were generally also a bit less interesting to me, some were good, some were bad, but I'd say they were of a better quality than Dark souls 1, 2, and Demon's Souls by far.
Just want to finish by saying that I think Dark Souls 3 had some areas that were better than anything else in the series, absolutely, and the first area is a huuuge throwback to 1-1 amazingly so. And that's not the only great, great vista you happen upon.

Bloodborne is my favorite game of all time but being a fucking ignorant fucktard, and claiming that it was "objectively" or "factually" amazing, is just plain stupid.
The game has a bunch of blatant flaws and annoying design decisions in it, it isn't perfect by any means. Its my favorite game but I'm not blind to its flaws.

They had some neat ideas like boss phases but I agree, the bosses felt poorly executed. It was like every boss in Dark Souls that just requires a lot of timed dodging, and that gets old so damn fast, it already did in DaS2.
FROM is just making games too fast, their games end up without enough polish in them. At least there's more content in there than most games, but it stops mattering when it starts to dip into shit tier territory.

Dark Souls had plenty of attacks that you couldn't dodge even during a fastroll, especially the bosses did, and you had more options available than just that.
In BB, plenty of times I got stuck in the corner with a boss and couldn't move, so I just timed dodges as best as I could while the camera was going haywire.
And it works, works too well. Until you maybe get a lag spike that fucks your timing or the camera gets completely obscured.
It's a really cool mechanic when the player occasionally can use it to gain advantage, but it's really depthless gameplay when that is your primary method of playing.
