Theres a million different ways to challenge run the game that are fun. Sl1 is a lot more interesting than people realize because the first thing people think is that it'll be way too hard or you won't do any damage. This isn't true at all because with the right rings you can be beefy enough to not get one hit buy all but a few boss attacks and with elemental weapons you can spend all your souls upgrading them instead and by the end of the game you might be doing more damage than you did on a normal run. This falls off in NG+ a lot less than you might think if you've got your elemental weapons diverse and maxed out. Youll still get oneshot in upper NG's though
I recommend trying an SL1 run. It forces you to get creative early on, it makes resins feel a lot more powerful, and its satisfying as hell to exploit the strengths of certain weapons and rings for the right situations and eventually reach the end game.

Just upgrade a weapon as soon as possible. Upgrading is literally the most important thing in the game. You can buy shards and large shards so don't be afraid of running out of them.
a +5 decent weapon with golden pine resin will 5-6 shot that gargoyle.
