Vanguard Bandits was pretty enjoyable. The gameplay isn't particularly deep, but the game made up for it with the characters, branching plotline, and fun premise. The combat animations are quite flashy as well and generally don't take forever to resolve, which is a rare combination for a PS1 RPG.
Saiyuki: Journey West is another tactical RPG on the system that is almost always overlooked despite being fairly good.
