every other build starts you with gear and better stats, so they are for casuals who need a leg up
real dedicated, hardcore gamers who have been playing difficult games since the NES days of ninja gaiden and adventure island pick deprived and never use a shield for anything but parrying, and they never heal either.
I typically go Deprived since it allows you to go anywhere you want with your character. It's nice since you start with decent stats in everything and can put points where you need them based on gear and spells/miracles you find that you want to use.
Otherwise Knight is always the go-to for Souls considering it's often times the build they use when showing the games off. Cleric is also pretty good if anything because the mace they start with is amazing on most bosses.

Bandit is a better class if you're looking for something that allows you to efficiently build into anything. The only class it's not the most efficient for is pure INT since its FAITH stat is higher than the sorcerer starting class.
Of course efficiency in Dark Souls 2 isn't exactly needed since matchmaking is based on Soul Memory instead of SL. It's the same reason why it's silly to ever stop leveling your character.

You can get a robe and cowl (and a staff) from Felkin as long as you have 20 INT and Faith.

Well that's one of the reasons I don't go Bandit. I typically build into a battlemage kind of thing personally, so int is something I want to at least be on a base level. And since Souls games often times don't have starting classes that give you a combination of str and int I just go Deprived. Also, it's kind of satisfying to first find armor and weapons. Since you're running naked literally any armor can be decent, so it's fun to start with literal rags and end with full armor.
But yeah, like you said it doesn't matter too much. By the time you get an hour in your character is wildly different from the start. Still, Deprived just lets me go any direction from the get go. The club is always pretty useful too.

That's the hexer set. It looks nothing like the black hollow mage robe, and there are only 4 enemies in the game that drop that robe. 2 of them don't respawn after you kill them, and the other 2 are inside of a boss fight, meaning if you want to farm it you need to go into the boss fight, kill them and hope for the drop, and homeward bone out if they don't drop it.
It's very tedious to obtain and it's a very nice looking piece of equipment. That's why I mentioned it. Obviously if you don't want to go an intelligence build then it's not worth starting as a sorcerer.
