Mass Effect is a bad choice to show a morality mechanic, since everything Shepard does is based around a central goal. Being a paragon is achieving that goal while maintaining his idealism and principles, while being a renegade is utilizing methods that fall outside of the accepted procedure. At the end of the day, Shepard's actions are the same: the player is given a choice on how to deal with achieving their goals, rather than what goals to achieve.

It's fucking stupid how you're not allowed to choose certain options if you haven't done enough good/bad things beforehand. Like in 3 when the Geth and Quarians are trying to kill each other instead of the reapers attacking their planet, if you haven't done an arbitrary number of 'good' things before that you're locked out of the option to tell them to stop being shitheads and make peace and instead are forced to choose to genocide an entire race.

How come Neutral is being defined as more and more "evil"-leaning lately?
Even being neutral between a debate will have people acting as you're against them. What's happening to "Neutral", why is the gray area disappearing?
You can still be Neutral in Mass Effect even if you pick paragon or renegade options depending on what you want to achieve, it doesn't actually have to be an actual option on the screen.

I am well aware of that. But the world of the witcher is written pretty great with how good and evil is portrayed. Where the better choice would probably not to get involved and stirr up the pot even more.

Any sort of morality system in vidya is generally handled terribly with some noteworthy exceptions, but there's absolutely no room for them in games with full voice acting.
When I played the first Mass Effect I didn't play as a renegade or paragon, I played making what I thought was the appropriate decision. I ended up about 1/3rd of the way into the paragon scale.
What pissed me off what that I got locked out of various responses I would of otherwise given, but wasn't good or evil enough to say.

I dunno; Mass Effect could have had a third side, easy - the two independent axes implied it.
Think about it:
Paragon: Known for being a goody-two-shoes known for doing The Right Thing
Renegade: Known for being a Hard Human Making Hard Decisions and giving no fucks about whatever is in the way
Ghost: Not known at all...

Evil would be a lot better if reprecussions like that happened. In most cases the rewards for evil are more money and less experience, and threatening or killing the quest giver for his pappys sword, with the only potential npc trouble being STOP RIGHT THERE CRIMINAL SCUM generic guards.

Seriously. Its like developers never realized that evil is appealing because its easier and far more lucrative for getting things you want. Theres no real benefit to being evil and you don't have to give up anything to be good. At least the problem was easier to handle when games were predominantly text based. Voice acting was a mistake.
