I'm playing it now. Pretty fun single player FF story at this point. Can take a job from 1 to 99 in a day. Sure, I miss the 2004 summer days doing it the old way but that's a pipe dream at this point. I'm just going to finish the whole story to get some closure.

There's still end game content that requires teamwork and alliances. Many things have been made easier to avoid a ridiculous grind.
It's faster but somehow still feels like the same game even without me camping Aspid and Nidhogg for 8 hours in the morning before going to high school.

You know... the thing I hate most about XIV compared to XI is the absolute lack of meaning to the story.
Some of this is the translation team's fault. Like with 2.0 Haurchefaunt.
But, honestly, everything in the story feels so detached from the game world. Like, the only reason you have to run back to the Waking Sands 50 times is because the devs wanted you to. Not because the NPCs have anything important to pass along or give you.
And everything feels so cramped, even in the HW zones. Though they're better... ish. But in ARR, the NPC dialog describes an arduous multi-day journey to get an item... and it's three feet away from them in game.
Yeah, 1.0 was too far the other way, with huge, empty, copy-pasted zones... but fuck at least they tried.

Literally any. Most powerful are probably BLU/BST/RDM/SMN/SAM/GEO. I mostly play on THF and DNC for the speed. You'll only need help for some of the Rhapsody bosses and there are plenty of people on Asura willing to help.

Actually, it did. If you read about the staff of FFXI and how they were moved around you would know XIV killed FFXI. It is known fact that large parts of the XI dev team were sent to work on XIV instead, including every leading staff member for CoP, barring Kenichi Iwao.
Is it also any coincidence that when XIV 1.0 was rightfully shit on for being total garbage that all of a sudden a fifth expansion was announced for XI? And then right after XIV ARR ends up being a financial success they announce XI will no longer get any more expansions?

XI team varied greatly over the years. A great deal of the key members of XI actually left right after RoZ, when Square and Enix had that merger. CoP was made by people who worked directly under them, then those people left around ToAU, presumably to make XIV 1.0.
It's hard to really know what exactly went wrong with XIV 1.0. I've heard some people say that the story for XIV 1.0 was actually really good (wouldn't surprise me since CoP and XIV 1.0 had the same writer as I recall). SE never really wants to talk about XIV 1.0 again so we'll never know what the fuck happened behind the scenes with it.
XIV is still focused on running old content over and over though. The whole purpose of the roulette system is to make it so the old content still has people doing it so newbies aren't unable to progress due to everyone doing newer content.
