The only VN that really hooked me from start to finish was Muv Luv Alternative but that was after slogging through Extra for about a month. Shiki Ryougi can 'only put up a defensive fight' against a servant but CAN comprehend their existence and thus can kill them (if she were fast enough).

Maybe you should try a sub character? You can stagnate by just playing one character trust me I've been there myself. Maybe someone with shorter normals than Ryougi and nonshit mixup so you have to get up close and see what it's like. It will show you things you didn't notice before.

Also I've noticed that you're often trying to mash out of pressure it usually doesn't end well in melty because of the easy frame traps and reverse beatback. Jumping out does wonders in this game you can also chicken block (up back). Trying to catch someone out of jumpout can screw that guys pressure and might leave gaps where you can safely escape or you can just mash him out of it so as long as you mix it up a bit you should have an easier time in the corner.
