I'm talking about games just even using an alternate Earth like those two images.
It doesn't always have to be the same modern day Earth landscape, there nothing that mandates its use. There's more opportunities when you can change the landscape, and you can explore alternate history/reality scenarios in a way you can't in other mediums.
A few quick examples-
>alternate history WWI/WWII game with Doggerland
>Total War/Grand strat game with Doggerland
>World War 3 game set on Pangea, massive land war campaigns and huge fleets clashing in the vast ocean hemispheres
>medieval ages game with Doggerland
>Rome Total War game with Doggerland, Roman Empire has even more landmass to conquer now, even more barbarians and northern peoples to deal with
>game set in modern age where Doggerland inexplicably and out of nowhere rises up, causing massive land grab among European powers
>Massive persistent RTS on a Pangea level
Most of these things will probably be possible with a game like Outerra Anteworld when it gets more gameplay elements and the worldbuilding and level design becomes easier. Hell you can lower the sea level and probably get Doggerland that way anyway.
Of course most of these ideas revolve around war because more land means more war.
Also it would be great fun to try to imagine an alternate course of European history and alternate countries that would arise if all of Doggerland was above sea level like that map during our age. So Rome would have to contend with it, and during the middle ages, tribes and peoples living there would form new countries and territories. Most importantly Britain doesn't exist as we know it and doesn't become a naval power.
Everything we know about Europe would be different, and this kind of stuff could be well explored in games that haven't bothered to do so yet.

Like will I control the entire Empire if I roll humies, or will I control a faction within the Empire?
Will I control all the greenskins in the world, or only one faction of them?
Does it matter which faction I pick in terms of units, or is it all geographical?

As far as I'm aware you can only pick one faction. The one imperial city, only Drakenhof, only the one province amongst many for Orks.
What you can choose that differs is your starting lord, you can either be Vlad or Heinrich Kemmler etc. And I think the other lords show up eventually.

Warhammer is one of the best settings for a fantasy Total War game. The factions vary wildly, every one of them has an incredibly detailed military (most settings lack this very important feature), there are baked-in hatreds everywhere which means near-constant war is basically guaranteed, and it has a pre-packaged endgame threat in the form of the Storm of Chaos/Archaeon's Rape Train.

ES' setting doesn't really lead to a good TW adaptation.
Narnia is a really interesting suggestion, no way in hell there would be much of an audience though.

Yeah it's something for you to sink your teeth into and never get over ever becuse you want to whine about absolutely anything but it's a full faction and it's free and they've already stated they had to hire a secondary programming team to get chaos out instead of having it playable in the third game.
They aren't even really the main bad guys of Warhammer Fantasy, end times made everything about them but before that outside of Archaon they are just a bunch of vikings that raid the empire occasionally.

I disagree with the ES one. There's a huge lore spot that's missing where a TW game would fit in perfectly. You could also go with before the first era when the Septim bloodline started as well. Of course they'd have to make almost all of the unit classes from scratch because fuck giving the military side of TES games any work.
