Can I also just walk out of this room to finish some unfinished business? Asking because in Dark Souls 1 that would actually still mean I'd end the game. But since summoning the Firekeeper is this game's "walking out" maybe it's safe to leave..?

You don't have to kill that Hydra until the DLC. When you do, you can run straight up to him, cut off a middle head and just whack away till he dies. He literally can't hit you. The next boss after him, literally the next one, is a huge pain in the dick for certain builds.
