About to start this game, read in an earlier thread that you shouldn't level up until the second or third planet, is that true, and if so, why?

No no, just level up when you get your first lightsaber, because your main character is actually an amnesiac Revan in the game which is later revealed.
it doesn't matter unless you're a min/max autist.
Some people want to save all their levels for when they become a Jedi, but it doesn't matter.

Honestly, KOTOR is easy enough that you really don't need to worry about it. But yeah, if you wait until you gain your Jedi class (on the second planet, Dantooine) to level up past level 2 (you're forced to level up once during the prologue aboard the Endar Spire), you won't waste any levels on your starter class.
Besides, if you really want to, you could just use the KOTOR Save Editor (KSE) to remove your base class and pretend like you started with a Jedi class (like you do in KOTOR 2).
I find its useful to save leveling up for hard battles. You completely refill your hp when you level up.

So question, putting aside the whole knights part in the title, anyone ever use the save editor to edit your class to play a non Jedi character?
there's mods that let you start as a jedi on the ship, just download one of those. There's really no purpose to not being a jedi at that point, the game doesn't get particularly easier or anything.
