Morrowind.
Depth, dark, unforgiving. Doesn't hold your hand to figure everything out. Richly rewarding upon retreads. Off-putting for normies and casuals.

Bloodborne- easy choice because its artistic value and pure "good game" factor goes largely ignored by only being played by less than 4 million people

Depends.
World is one of the most detailed out there. Writing is amazing and more you read it the more you realize that it is not one story but several clusterfucks happening in the same time with time travelling probably screwing things up.
On the other hand writing can come as showing off and you do need a thesaurus when reading it. Those multiple storylines are shown from the point of view of mc that is mostly concentrated on himself so you have to reread multiple times to see all the details. For the same reason there is no handholding and you have to find out things by yourself.
