You can skip Dark Crusade since the campaign is on a Risk map, that gets pretty boring because you're attacking/defending the same territories. If you can, only play the faction stronghold levels.
Soulstorm campaign is the same Risk style campaign map - however it has all the races in skirmish mode and the best mods.
Dawn of War II plays like CoH-lite and isn't considered very well by many people.

Where do I start with the lore? I've read some wiki pages but I feel like they leave out a lot.

Tbh, start reading about whatever faction you're interested, and start clicking on hyperlinks to other articles. There's a shit ton, but evntually you'll be able to wrap it around your head.
Failing that, read about the Horus Heresy since this is the real kickoff point for 40K.
