That's just how these games are. Every boss that is the easiest is also someone's hardest and vice-versa. You spend days on a single boss while someone else one shot them.

To add to this, my first play through I stomped Ebrietas in one go and it felt like some real weak side-boss follow up like Celestial Emissary was but on my second run through it took me a good amount of tries.
I spent days on Orphan of Kos but no-hit killed Yharnam, Maria, a bunch of others.

Amelia is the hardest boss in the game for me. I literally cannot get her to half health whenever I try to play. I did beat her in my first playthrough after at least 30 times.

The tentacles and the head are separate hitboxes, so sometimes when you get hit by the head you will also get hit by the tentacles. Usually when dodging to the side but not being far enough
If your dodge isn't really good you'll take like 1300 damage (depending on gear) because of that
