At least the Cursed version of the dog is more difficult because it kills you in basically one hit. Might be bullshit, but it's still more challenging since there is a much, much smaller margin for error.

The combination of stomps and wide-arc sweeps was much different than anything else at that time. You definitely could not get more than one hit off at a time - later Headless Beast would be the same sort of challenge.
I'll admit, I had to slowly chip the guy down before targeting the tumors to kill him quickly after he goes steroid-mode.

Not really. Watchdog's moveset is insanely easy to avoid. He's pure telegraphs and all you have to do for most of the fight is dash backwards. Undead Hitbox is 100% worse.

The Plot of (Bloodborne/Demon's Souls).
A foreigner arrives at the land of (Yharnam/Boletaria), seeking (the miracles of blood ministration/the power of Demon's Souls). The foreigner finds their fate bound by (The Hunter's Dream/The Nexus), wherein they meet a demure and mysterious girl eager to provide support and a considerably aged guide that informs the protagonist of their plight and offers direction. Once they get into (Yharnam/Boletaria) proper, they find the residents to be quite insane and eager to kill them for their (Blood/Souls). Those of sanity are few and far between, and the protagonist is able to provide help to these downtrodden souls if they so choose. However, some among them are doomed to rather grisly fates no matter what should happen.
Such melancholy aside, the protagonist's journey is fraught with danger indeed, pititng them against a variety of horrors in the form of man and monsters alike. It becomes increasingly clear: being seduced by the all too addicting power of (blood/souls) is liable to make any man into a (Beast/Demon). With some inference, the protagonist may even realize that the opposing factions within the world are ultimately addicted to the same devilish power and will meet the same monstrous fate. And in the end, the protagonist will confront the ancient force that binds them to (The Dream/The Nexus), which apparently has a link to the girl that's been supporting them all this time, and based on their actions, they will become a (Great One/Demon) or end up in the position of their aforementioned ancient guide.There's a third ending for BB but that's for cowards only so it's not important.

Both bosses are great intro bosses into the series, and serve as excellent challenge escalation without being a wall.
All required bosses in the game are designed for newcomers and vets alike. Optional bosses are the ones designed for vets.
That's why Wyvern is basically a dragon god reference.
Why Nameless King is one of the hardest bosses in the series if you don't cheese with broken poise damage weapons
