I personally don't like rapiers too much, if you want to try a skill based weapon why don't you go for a scythe? Lifehunt or the one in the catacombs. Last time I played I decided to give them a go and I had a blast. It's a very fun weapon, just don't use it one-handed with a shield. It makes no sense if you want to be a pro reaper.

Dex based I'd also suggest Blacksteel Katana (it breaks easily but I love the moveset and the scaling is top tier), or else the Espada Ropeira (rapier) for late game content. I like to go for a hex build. Find it actually to be the most challenging as you just dump shit into int and faith untl you found a good scaling GS. Until then rapier and mele. I used them, alright. I used damn near all my spells on him. Most homing soul arrow magic will miss Astorias because he moves so much and you have a big delay on casting it.
Miracles do good damage, but lighting spears are very slow to cast as well Astorias doesn't give you much breathing room.

Tbqh, the game is a complete joke the moment you have memorized where the upgrade embers are located.
Because this essentially means you can get a +15 wep, extremely early in the game, and if you just run down to Blighttown and get Power Within as well, you're probably looking at doing around 600+ damage while 2-handing a decent weapon, which makes most bosses a joke.

Mages aren't actually that much squishier. You trade 1 damage stat (STR or DEX) for INT, leaving you with pretty much the same defensive stats as anyone else. I guess spell slots could cost you some vit or end, but you also don't really need that many spell slots since spells are largely your boss nuke.
The only way sorcerer would be harder is if you're committed to nothing but INT and ATT, no weapon, no shield, and dual-wielding your staff for no reason. Most sorcerers don't actually play much different from other builds, except they also get a ranged option that shits out massive damage.

Really now? Well then, guess it's a good thing my first playthroughs are always purely physical builds and I never summon the first time through.
Only time I've summoned in any of them on my first run was I started doing it for chalice dungeons in Bloodborne because I was getting bored slogging through them but it was just the NPC summons and I'd always end up having them dead by the time I'd hit the boss anyway.

I've never been one for enchanted weapons. I usually go straight dex,str, or quality. Doing +5 damage for 7 seconds doesn't seem very useful to me.

I've beaten beaten every souls game purely melee and solo, once 3 drops, I'm using everything, enough tryhardness.
I summon on every boss that makes me fight multiple enemies at once. That shit is just not fun
