It's also a 480p game (in comparison to the other console gens which were 720-1080p).

To be fair that was just a port and wasn't touted as a superior remaster at all. It also ran at 30fps instead of 60, that's easily the biggest mark against it.
PS4 has so many ports and remasters because Sony can't afford to make any new games and big publishers are struggling to keep up themselves beyond their big AAA blockbusters. PS4 is Sony's attempt to recoup the massive losses incurred with PS3.

Comparison:
When you "sidescroll" across DKC, the shit you pass disappears and is no longer processed being replaced by new shit in front.
In 3D open world games, you have a camera.
You can "zoom out" to display more objects/peripherals/content/physics etc.
Or even just walk away eg. run from Peach's castle's doors and keep that camera infront of you.
You have shit ton more animations in 3D, Eg. Moving in 8 directions as opposed to 2.
Everything is more dependant in 3D.
In 2D, you just have scrolling backgrounds that have little to no dependancy and are just automatic animations.
Why else do you think Banjo Tooie, Super Mario 64, Zelda64 ran in the 20s of fps whereas Smash64 ran at 60?

You could have played each of those games without having to shell out $60 each, among every other title the PS3 has. There's no reason you couldn't have both backward compatibility and a few HD remasters, especially collections of games.
Lots of people cared when Sony removed BC from the PS3. They did it then because they were already losing something stupid like $150 on each PS3 sold, they could have done BC on PS4 and not lost money.
Point being PS4 has so many remasters and ports because they need to pad out the library and it's better for their bottom line. they lost a lot of money on PS3 and PS4 was designed and positioned to make as much money as possible, not deliver the best possible, or even a good, experience and value to the customer.

PS4 doesn't have the power to emulate a PS3 not to mention it would be a big pain in the ass to develop an emulator with the whole cell architecture crap that limited games on PS3
I remember reading something like this when TLOU remastered was being developed and Neil Druckmann was talking about how nothing in their PS3 build worked on PS4 and the game kept crashing so they had to re-code the whole game, of course it's a much faster task when you have the whole game assets and code
The only thing that works is that PS service that lets you play games over the cloud and even that isn't perfect and demanding bandwidth wise
