First of all, great choice in weapons.
Huntsman snipers: Actively contributing to objectives, can help push cart and fend off enemies at close to medium range.
Rifle snipers: Have to sit in the back of the action and play the waiting game, contribute to objectives way less.

Now, to answer your concerns about the huntsman accuracy, you have to consider that the hitbox of the arrow projective is relatively large and therefor it's (most likely) colliding with the space your crosshair is over in your image.
I'm no expert but I believe the hitbox would be about the same as a rocket projectile, just without the splash damage.

No, what happens is that in TF2, projectile weapons are fired from the position of your viewmodel towards an infinite point at your crosshair, so at close ranges there is some offset as projectiles (rockets, needles, fire, arrows) are not fired from your face/camera.

Compare this to games like CS:GO, where all bullets are fired directly from your face, which allows for headglitching as well but does not carry this discrepancy close to corners.

So yes, you can fire around a left-sided corner in TF2 by standing and looking at the corner, and you can consequently look past a corner but shoot right into it.

As an addendum to this, this is why people in TF2 who use left-handed viewmodels often complain, because projectiles/tracers actually come from the right side of the character, which is at odds with what's displayed.

The original is the only rocket launcher that actually shoots straight from your viewpoint though.

Which makes it slightly more useful for rocket jumps as it doesn't boost you towards the left.
