I just beat this boss a couple of days ago. It's really really easy. Once you've got his pattern down he goes down quick.
I've been dissapointed with the bosses so far in demons souls. The main reason I loved dark souls 1 and to a lesser extent liked dark souls 2 was the boss battles. The bosses I've fought do far are that congregation of blobs in 1-1. The tower knight, that witch in 2-1, the armour spider and the adjudicator. Of those, only the tower knight had a cool setup and all of them went down really easily.

If you find Slammough easier, by all means take advantage of the magic uchi strat to help you get more DPS, but if you're going to be fighting the second phase against Dunkstein you're going to want a longer weapon to sneak in some damage. Yes I died once on maneaters, that's true. Don't know about King Allant considering I haven't finished the game yet. But none of those things you mentioned were even things I knew about, it led me to believe you were just mad at the boss from losing so much, if anything the biggest problem was that his pathfinding was laughable, but not in the way you said it was; I was pretty much never confronted by him throughout the whole fight.

There's one one case where I will agree with you, and that's the Double Pursuer boss fight. There's no rhyme nor reason for that goddamned fight, there's no pattern, there's no positioning to take in mind. Every other multi-boss fight in either game always felt fair to me, with the possible exception of Burnt Ivory King, which is a case apart.

Similarly to the normal armored guards, the best way to approach them seems to be baiting them into slamming the shield into the ground, then hacking at them after they do so. It's somewhat harder to roll between their legs than their normal counterparts, but if you approach one at a time it is fairly manageable.
That said, they manage to still be a nuisance for the rest of the game if you hang around the area for some reason.
This is the one boss in the game I feel it's OK to summon for simply because unless your a pro, taking one of them down while having to dodge both of them isnt fun
