Seriously any mods that are essential or should I just play it vanilla.

ILOVEMorrowind.
1. Don't listen to anyone recommending graphical overhauls or other modernized bells and whistles.
2. Install Community Patch (code patch or code project, whatever it was called).
3. Don't abuse alchemy, including vendors AND intelligence potions; otherwise alchemy is fun.
4. Don't abuse the two merchants with best rates; otherwise the economics is fine.
5. You really don't need any mods, besides maybe the one for Tribunal which postpones certain events occuring too early in the game; to find the mod, you'll probably have to spoil it a bit.
6. Have fun, and don't forget to read books!

Morrowind Code Patch is the only essential one. But some of the "fixes" are just anti fun stuff, so try to look out for them and leave them unchecked.

Vanilla first
1. skeleton race mod
2. there's a mod that with every urn you check in tombs there's a chance you will find a magic item OR you will gain bad juju and need to be cleansed or ghosts will haunt you.
3. there's a mod that adds corpse retrieval. after you die, you spawn as a ghost in any number of locations and have to fly back to find your body.
4. you need all sorts of vampire and sex mods for maximum roleplaying.

Unofficial Morrowind Patch Project (bugfixes), Morrowind Graphics extender (distant land so fog doesn't make it look like Turok N64), and in my opinion Mountainous Red Mountain (makes the volcano at the center of the island imposing as it should be).
Tamriel Rebuilt is a solid choice as well.

The code patch is a program you run once to patch the .exe. Graphics Extender runs simultaneously with morrowind to improve view distance etc on the fly, think you need to run it once by itself to generate the distant land files. I remember the instructions for each of these being straightforward.
There's two mods in that list to improve how trees and rocks look around the mountain, not essential but think you'll get annoying seams otherwise.
