Hard to discuss Stellaris because the only people familiar with it are those familiar with Paradox, and people tend to have strong opinions about them.
I might buy it because, as much as I hate Paradox's business models, I do still enjoy their games, and the concept of a sci-fi 4X/Grand Strategy mashup is like a dream come true for me.

Having bought most of their DLC, I actually agree with you.
I think some people just have a hateboner for DLC and dislike Paradox for it on principle, but their model is actually incredibly good. You get a major expansion pack every few months for 15 bucks along with a separate content pack (cosmetics like unit models and stuff) for 5 bucks which you can get if you feel like it, without having it inflate the price of the expansion pack.
