The maximum giant souls you can get is 5, you get one from the giant dragon at the shrine. They lower his defense by multiples. Also he attacks in 3, Dodge then hit once, magic does a lot.

The entire reason I'm replaying this is because I want to git gud for DS3.
Up until now I've played all the souls games (excluding Bloodborne since I don't have a PS4) using shields and summoning other people. I want to stop being a babby and do it right this time.
