It depends on conversational choices, with the ones before bosses weighed most heavily.
There is a secret way to change it at any time but iirc it's only possible in New Game+

Once you do the Fairy village Quest enough that the Goblin starts digging, keep talking to him and sometimes you will be able to offer help
Decline to help and take what he finds to gain chaos points, offer to help and let him keep it for law points
This is repeatable for as much as you want

You did right, DeSu is a good starting point since it's not about being good at buffing/debuffing like the other games and has a quite easy demon fusing/contract system. He'll be confused by the name of the buffs and debuffs in the other titles, tho. I still can't remember if dekaja is that spell that blocks insta death spells or that spell that removes buffs from the enemies.

Shopping Mall was the biggest pain in the ass for me because I messed something up in my head and got confused as to how to proceed.
The rest of the floors were nice and punishing, but still felt good to play because I could mentally catalogue what led to where pretty easily.

The only places that got me stuck for a little bit were Jimenez (who I died like 3-4 times on), the floor with the lava pillars (because I walked right past the switch to turn them off), and Mem Aleph (who walled me out so hard that I left, grinded for ten levels, fused a shitload, and still got shitstomped. Then I just used a password to get an Alice that had more than 6X my entire party's damage output)
