Reference: Something which makes more sense in the context of something else. You racing Claude from GTA3 in GTA San Andreas is a good example.
Easter egg: A secret in a game which you have to go out of your way to find, which also adds something to the game exclusive to that secret. It can be a reference, like the Wolfenstein level in Rage, or it can just be something out of the usual, like the giant purple rabbit you can find if you go to a specific spot in Saints Row 2.
Meme: A joke that get's repeated ad nauseum by a community until it eventually ceases to be funny. Sometimes videogames contain references to memes, like Claptrap's wubwubwub bullshit in Borderlands 2, and sometimes videogames unintentionally create memes, like Skyrim's epic Arrow to the Knee meme.
