I namely wanted to see what other people wanted, because from a business standpoint we should all want this game brimming with content. You need to make sure casuals want to buy it, and people who already play SF or other 2D fighters to pick up a new one.
Plus it's nice to know you bought something full, not just something high quality. It pissed me off that even after 4 editions, SFIV has no survival or team battle. It means you run out of things to do; between laggy matches full of people badly recreating rinse and repeat combos and boring CPUs, those simple lore and gameplay modes give me enough of a breather to keep playing.

XIII looked good on this aspect. 98 was the best if I remember correctly since it's game that got me into the series.

None of those characters have had muscles that rippled from underneath their clothing.
Joe is bad example because of that, he is shirtless so of course you can see his muscles. Put a shirt on him and he looks lot less buff.
And KoF characters on average have always been more lean than Street Fighter characters for example, it's the difference in the styles.
And I feel that it's good that they keep the difference and maybe even exaggerate it a bit with the new game and new 3D style.

It's just that KOF's aestehtics followed a more realistic definition of a "buff guy" than other games did, even outside fighting games.
Plus there's the fact Kyo is 20, so he's buff as fuck for his age.
