sorceries do almost zero damage and have insane cast times, it is by far the worst that sorceries have been in the Souls series
pyro does like double the damage for most the game while also have insane AoE and utility

Vigor is most likely health, cause it's always at the top, and attunement manages spells I bet.

1. long sword is a god tier weapon, the axe cannot even compete
2. knight has less luck and more attunement. luck is useless, but attunement is needed for more weapon art castings
3. the knight set gives much more armor than the northern set

Eh, I can't agree with having Warrior that low. Warrior and Knight are really very similar classes, assuming a physical build. Depending on what stats you favor one will win out, but it'll only ever be by a few points.
Armor and Shield are largely irrelevant in Souls games, so that's mostly a style issue. The Knight does win out on weapon, but it's not like it'll take you too long to find a longsword anyways.
