It was too easy to get high poise. It's why havelmoms and giantdads existed. You didn't even need a full set of armor to get optimal poise. By just adjusting some numbers and ultimately making it harder to achieve the best poise, it would be flawless.

Poise in 1 had the "superarmor" frames active the entire time. You could use them with any weapon. This lead to circlestrafing, hornetstabbing shitters.
Poise in 2 had the "superarmor" frames active ONLY during animations. This meant heavy weapons, which have longer animations, along with heavy armor, more usable. You couldn't just stand there and tank hits, which really discouraged circlestrafing. It was meant for slower, heavier weapons, which it completely accomplished.
If you seriously can't understand this you have mental damage. Out of all the things 2 fucked up, poise was not one of them.

To keep under certain weight thresholds without changing your weapon you had to wear armor with less poise, which didn't accomplish much. If you want to win with heavy weapons you have to take advantage of their range, poise doesn't help much
Flynn's ring doesn't help either, because trading hits with DEXfags ends up in a draw even if you have 50 STR
