Most of those games have you start off as a complete rookie, have to learn each spell and its signs (spells are casted by a combination of signs, some being pretty long), have to first get proficient in quickly making signs, the more proficient you become in signs the faster you can cast spells, then you also have to increase the proficiency of the spell which usually augments its abilities like doing more damage, having more range.
