I recently finished Trails of Cold Steel which I thought was one of the most enjoyable RPGs I've played in a long time, with a likable cast of characters, interesting locales, outstanding musical score, epic story, and battles that were actually challenging and required a degree of planning and strategy (something typically unheard of in JRPGs). And of course plenty of cute waifus to lust after.
I've read a lot of people say Cold Steel is inferior to its predecessor Trails in the Sky, but I tried playing that and just could not get into it.

Blame the baka westerners for the jRPG draught that spanned nearly all of last gen. All the good jRPG devs went away, died or just didn't localize here because the western press had a gigantic hate boner for anything jRPG for the whole 360/PS3 era. Everything with a slight stink of jRPG was panned hard.
At least the curse is finally broken. There's a buttload of interesting jRPGs coming out this year and not just budget crap like Neptunia.

The endless eight segment was punch in the gut. But I thought Default was an excellent callback to older jrpgs. And in truth I felt it was worth all that crap just for Airy and Ouroboros in the end.
But Second? A plot that goes nowhere, unexplained retcons everywhere, completely forgettable music and characters. Only good thing were the small improvemennts to gameplay and the new asterisks.

Mostly the cast.
Best protag in a JRPG in forever. Rosch is a bro. Aht is cute without being annoying. Only Eruca is kinda boring.
Even side characters like Raul are really likeable. Stocke also isn't constantly thrown in the spotlight for being the main character, and everyone gets their time to shine.
Battle system is fun and interesting. Time travel mechanics are pretty good, lets you revisit shit at your own pace, makes the game feel not linear at all (even though it is). Some of the choices Stocke has to make aren't obvious. Having to alternate between timelines is a neat idea.
But mostly Stocke. A good protagonist and a good cast goes a long way. Just like a bad one can kill your game; see SO4.

In Rune Factory's case I'd just say that it's a game with RPG elements. It's as much an RPG as Zelda is. Souls games on the other hand rely heavily on stat progression as they determine what your character can and cannot do. That's as RPG as it gets.
