Sword is objectively the worst choice. It only gives you +1str, which can obtained through craftable stat boosts
Many people argue that giving up sword, and picking staff is best, because the extra MP is very useful, and gives your gravity spell extra damage.
I personally think picking the shield and giving up sword is the best choice, because being able to have 2 extra item slots is better at endgame than and extra MP.

I always felt the way to choose in these sorts of situations is not to min/max. Pick the one that suits your personality or desired playstyle.
It's why the stats are obfuscated in the first place.
