Right now the games are pretty simple. They're more like arcade games than fully fleshed out now, and they look simple because they need to maintain 90fps. I find it a willing sacrifice right now in quality and it will only get better.

There was a webm of someone playing GTA V in virtual reality with the pistol linked to a controller. I wish I had it to show you. Implementation of the devices will depend on the game. The Vive has a headset and two controllers, it can do anything the Oculus can do by acting as a sit down headset or walk around with the controllers. It's up the developer to decide what kind of controllers they want to use.

Hover Junkers is the game I'm excited about, it's a game being developed strictly for VR, no mouse and keyboard

The way movement works in Hover Junkers is you have to dedicate one hand to it when you want to move and sacrifice dual wielding if you do. It works as a WASD joystick, forward goes whichever direction your head is facing and you strafe like that as well.
