I have to agree with this to an extent, I did really enjoy skyrim and put 600+ hours into it but as someone who played morrowind and oblivion extensively I think that skyrim felt very dumbed down and oversimplified to appeal to the masses, I also thought the same for fallout 4.
I know this isn't exactly popular opinion, that's just my take on it.

People liking something does not make that thing good. Honestly if you like something because everyone else does and not because of its actual good qualities you're an idiot. You listed nothing about gameplay, quality of content compared to previous installments, design, etc.
And Skyrim is shit in those regards. Every dungeon is a straight line full of Draugr. Every quest is "please retrieve my family heirloom from this straight line dungeon full of Draugr." There isn't nearly as much variety as Oblivion or Morrowind. The game is extremely repetitive. Dragon fights overstay their welcome and level scaling means no good progression.
I can't think of one engaging quest in Skyrim while New Vegas had dozens.

It's all on the writing, i've played both Morrowind and Oblivion (And some of Skyrim) and i can tell you neither of the 3 games is a masterpiece on every single aspect, a linear sidequest can be just as engaging as a branching one
