If you don't have any elixirs or at the very least a talisman of rebirth, you're fucked. It's completely random when you can or can't hit her. Best bet is to use inferno ninpo to knock her down and hope that you can get a few hits off of her.

Like this, flying swallow shurkin cancel until you hitter and then do an on landing rotate Y attack, I think its called gleaming blade.
