Uther wouldn't have changed his mind. As a paladin, he's sworn to protect and keep life no matter what, even if that life will cause untold death. He'd have insisted that they research and explore and find a way to reverse or neutralize the plague, which would have only let it run rampant and swell the ranks of the Scourge.

uhhh no that's not how it works. Protect yes, but keep life? No. Paladins are meant to uphold the law, even if it means killing someone in the name of justice or mercy.
Put Uther in Arthas' shoes to make that choice. He would of either caved in and done the city purged or watched in horror as his inaction caused the entire city to become undead and wreak untold havak.
In the later he would of either punished himself or been punished by the crown for doing nothing.

Kaelthas can get a pass for honestly being the first one they did and Muradin was a real fucking stretch, but Illidan is a demon now and completely immortal, Kel'thuzad is immortal so long as his phylactery remains intact, which it is, Anub'arak is undead so they can do whatever the fuck they want with his corpse and elementals can only be killed in their elemental plane, all you did in the molten core was banish ragnaros but you killed the fuck out of him in firelands.
I'm not saying Blizzard isn't a bunch of lazy hacks that can't make original content anymore so they have to reused fucking everything, but it's not like they don't at least give a reason for this shit
