Diddy Kong Racing continued in the footsteps of Mario Kart while also pushing it forward.
Mario Kart jumped the shark with Mario Kart 64. They introduced the blue shell which marked its descent into the party game genre where anyone can win at the last second through luckily getting certain items, even if they sucked the whole race.
Diddy Kong Racing added two different vehicles, hovercraft and airplane. Racing in 3D space. All three vehicles needed a different racing style. The game had an overarching story, boss races, four different themed hubs within the peaceful overworld. Great music too.

DKR didn't feel as rushed as MK64
Crash was also good since it's inspired by DKR but feels more focused since it's strictly about kart racing rather than different vehicles. I'm mixed between DKR and CTR on which is a better game, but they're miles better than MK64.
