I did the secret win condition for every fight in Vesperia
I used to do speedruns of the first Resident Evil game using only the knife, it's a fun as way to get more out of a game I love, I want to start running it again and learn RE3 knife only as well

I never really tried to reaction parry him because his initial horizontal swings are too varied in their speed, and it's a lot easier to block the first hit and just assume that he's going to follow up with another.
Worse case scenario he's just going to swing once and you end up parrying nothing, but he'll never get you in that time window.
