Demitri is the main character of DS1 and the franchise as a whole. Donovan is the main character of DS2. Jedah is the main character of DS3. It makes sense if you look at the titles of each game: "Vampire", "Vampire Hunter", "Vampire Savior".

And Morrigan, who is more recognizable and popular in general, is also less resource intensive as a bonus, so she can get tossed into everything. Bear in mind that Capcom recycled her 1994 sprite for the longest time so it's absurd to think that they'd put in the work necessary to toss Demitri into everything. Hell people flipped their shit when Terry didn't have Buster Wolf in KoF12 even though Buster Wolf isn't even his primary DM, Power Geyser is.
Aside from the usual thing that he doesn't have tits and a vagina, another thing that probably kept people away from Demitri was the fact that when you get down to it, he's an asshole compared to Morrigan and Felicia who are much nicer.
